The BEST, Easy French Bread Pizza!

In the past year or so, since becoming pescatarian (oh, did I mention that?!), I’ve really taken to buffalo mozzarella and sun-dried tomato pizzas from the supermarkets. My go-to pizzas used to be pepperoni or chicken and mushroom, and I had no idea just how good pizza’s without meat could be, but a pizza oozing with mozzarella and tomatoes is so good!

The other evening I decided that, instead of buying a pizza, I’d make a simple French bread pizza and in all honesty I’d forgotten just how good – and how easy – homemade pizza can be. And the best thing about it is that you have complete control over what ingredients you use so you know exactly what’s going into it.

When I went to the local shop to get the ingredients I forgot to buy basil for the topping but it turned out to be a blessing in disguise as instead I opted for pesto and oh my goodness, what a lift it gave the pizza! The pesto combined with the mozzarella and tomatoes was mouthwateringly good – the taste of summer.

Of course you can swap the toppings for any you like and you can experiment with different bases. But it really is so easy I think I’ll be buying a lot less supermarket pizzas from now on.

French Bread Pizza

French bread, cut to the desired size then in half, lengthways
Tomato sauce pizza topping (shop bought or homemade if you prefer)
Cherry tomatoes, sliced
Buffalo mozzarella, sliced

Preheat the oven to 200c/400f and line a tray with foil.

Spread a generous amount of tomato pizza topping over the sliced French bread.

Add sliced cherry tomatoes, dollop over some pesto then top with mozzarella slices.

Bake in a preheated oven for about 10 minutes, until the cheese starts to melt.
