Well it may not be quite winter but it’s certainly starting to feel like it. This will warm you up.
Ingredients
2 red onions
2 tomatoes
1 red pepper
1 carrot
1 parsnip
1 large field mushroom
1 potato
1 crushed garlic clove
1 litre vegetable stock
Chop the onion and sauté in olive oil for about 5 minutes. Add the garlic and cook for a few minutes longer. Chop the rest of the vegetables and add them – add the tomatoes last as you don’t want their juice to come out too soon. Sauté the vegetables until they start to soften and colour, then season and add the vegetable stock. Bring to the boil and simmer until the vegetables are cooked through, then blend. You may need to add water to thin the soup down a little.
