Every year at around the same time I catch asparagus fever. Into season it comes and onto my plate it lands. And lands, and lands. Despite eating it what seems like constantly throughout the season I never tire of it. Perhaps if the season were longer I would (although I really can’t imagine that) but as it is asparagus is here for a preciously short time and I’m going to make the most of it while I can.
Therefore, no matter what I choose for dinner there’s a high chance that asparagus is going to feature in there somewhere. Like the other evening, when I decided on baked sea bass, my favourite fish, for dinner. I prepared it very simply by stuffing it with lemon slices and parsley and put it into the oven at 220c for half an hour. After 20 minutes I added my prized spears of asparagus, drizzled in olive oil. Simple and flavoursome, the dish needed nothing else save a sprinkling of salt.
