Wow, what a scorcher it was last week! Temperatures hit the 30s, official health warnings were issued due to the heatwave and the UK was declared hotter than the Mediterranean. It was fabulous at the weekends and even the brief shower we had on my birthday barbecue didn’t spoil things: we just made a dash for the house carrying plates of food and cutlery while a few of the boys picked up the garden parasol and brought it over the barbecue to shelter under while they finished cooking the sausages. Us Brits have become experts at dealing with rainy barbecues; you have to in this climate.

I was really very pleased with how this turned out when I put it together for dinner last night, using leftover roast chicken and stock from the carcass. Chicken and chorizo is a great combination anyway, and the base rosemary flavour was a very complimentary backdrop. Whilst there wasn’t a great deal of flavour from the watercress it gave a really good texture and colour to the dish.
This pasta dish was just what we needed tonight to fill us up and warm us through.
A really good sausage, full of quality meat and nothing much else apart from some herbs and seasoning, will shame the socks off of those unappetising and depressing specimens found far too often in the supermarkets.
